Legumes can be a great substitute for meat or fish because they are high in protein.
Since peas, peas, and lentils are foods that can still be found in many grocery stores, here are some recipes starring beans. In addition, they can temporarily replace meat, while not inferior in protein.
Pea cookies
Ingredients:
- Peas – 1 tsp.
- Eggs – 2 pieces.
- Flour – 4 tbsp.
- Onion – 1 piece.
- Spices – 1 g / g
- Mayonnaise – 2 tbsp.
- Salt to taste
- Greens as desired
Cooking:
Soak the peas for a few hours, all night.
Squeeze the water, pour boiling water (about 2.5-3 tablespoons) և cook for 40 minutes. Salt at the end.
Squeeze the water, transfer the peas to the blender, beat the eggs with the chopped onion. Then add mayonnaise and flour. Mix thoroughly, add spices and herbs if desired.
Fry the pancakes in vegetable oil until golden brown.
Lentil paste
Ingredients:
- Red lentils – 100 g
- Carrots – 1 piece.
- Onion – 1 piece.
- Walnuts – 30-40 g
- Butter – 50 g
- Dried garlic – 1 pinch
- Salt, pepper, dill – to taste
Cooking:
Rinse the lentils, cover with water in a ratio of 1: 3 and cook for 20-25 minutes, until soft.
At this moment, chop the carrot and onion finely, fry in vegetable oil until soft. (up to 5 minutes).
Add lentils, fried, soft butter, walnuts, spices in blender, mix until smooth.
It is better to eat cold.
Beetroot cream soup with peas
Ingredients:
- Beets – 350 g
- Peas – 100 g
- Cream – 100 ml
- Onion – 50 g
- Paprika, suneli hops, turmeric, curry, cinnamon – 0.5 tsp. (by availability)
- Water (or vegetable broth) – 700 ml
Cooking:
Soak the peas all night. Then strain the water and boil it in fresh water for 30 minutes.
At this point, cut the onion and beet into small random pieces and fry in a deep frying pan or saucepan for 8 minutes. Add half of the spices.
Cover the beets with water or broth and cook for 35 minutes.
When the beets are soft, pour all the contents into a blender, stir until creamy. Add cream հար mix well.
Transfer the cooked peas to the pan and fry with the other half of the spices for 10-13 minutes.
Divide the soup into bowls and put fried peas on it.
Lentils with champignons
Ingredients:
- Green lentils – 1 tsp.
- Champignons – 250 g
- Onion – 1 piece.
- Garlic – 1-2 cloves
- Carrots – 1 piece.
- Salt, pepper, spices – to taste
Cooking:
Wash lentils, cover with 2 glasses of water and cook for about 20-25 minutes.
At the same time, fry the finely chopped onion and garlic until translucent. Then add the grated carrot on them and fry for another 3-5 minutes.
Cut the mushrooms into thin slices and add to the vegetables. Fry everything together for about 10 minutes.
Then mix the boiled lentils with the mushrooms fried in a pan, if desired, fry everything together for 5 minutes.
