The young potato season has started, which means that you have to undertake the preparation of delicious and unusual dishes with potatoes.

Young potatoes have already appeared on the shelves in the gardens – a traditional dish that is practical for any Ukrainian feast. Our people know almost everything with potatoes: cook, fry, add to salads, soups. Ukrainian restaurateur-chef Yevgeny Klopotenko advises not only to cook fresh young potatoes, but also to try these vegetables by adding cinnamon, caramel or dill.

It turns out that one of the most popular vegetables can be combined with a well-known dessert ingredient. Danes often like to taste potatoes with caramel, so we can repeat the European recipe in Ukraine. We have potatoes, we will also find caramel.

You should choose young potatoes of the same size.

COMPONENTS:

  • 500 g of new potatoes
  • 30 g butter 82.5%
  • 30 g of sugar
  • 1 st. l. lemon juice
  • 1-2 pinch of coarse salt

To start, take 500 g of young potatoes, wash them and transfer to a saucepan. Fill with water and cook over medium heat. Then squeeze the water and let it cool. Please note that new potatoes take less time to cook than regular potatoes, so be careful when preparing the main ingredient.

Let’s start making caramel. Heat the pan over medium heat and add 30 g of sugar. When it melts and it gets a little dark, add 30 g of 82.5% butter և 1 tbsp. l. lemon juice to make caramel sour cream. Stir from time to time.

When the butter melts, mix և add the potatoes to the pan. We walk around several times so that everyone is honored in the sweet caramel. To balance the taste, sprinkle the potatoes with 1-2 pinch of coarse salt. Serve hot և eat immediately, as the food heated a second time will not have the same taste as freshly cooked.

This recipe is already more familiar to our latitudes. After all, in addition to potatoes, onions also appear on local shelves.

COMPONENTS:

  • 400 g of new potatoes
  • 100 g onion (1 small onion)
  • 50 g of ham
  • 70 ml cooking cream (18-30% fat)
  • 50 g of hard cheese
  • 1 st. l. sunflower oil
  • salt and pepper to taste

First we wash 400 g of potatoes և cut into circles about 1 cm thick և, we cut the onion into half rings.

Fry potatoes and onions in a frying pan with one tablespoon of sunflower oil for 5 minutes. In parallel, add 50 g of chopped ham, fry on medium heat for 5 minutes.

At the end add 70 ml of cream with 18-30% fat և 50 g of grated cheese. Cook on low heat for 5 minutes. Add salt and pepper. Serve with finely chopped parsley.

Meatballs are balls of minced meat. Thus, the combination of meat and fresh potatoes will be a great option for a hearty dinner or supper.

COMPONENTS:

  • 300 g of new potatoes
  • 2 cloves garlic
  • 1/2 st. l. wine vinegar
  • 20 g butter
  • Aromatic pepper to taste
  • sea ​​salt to taste

For meatballs.

  • 300 g minced meat (pork ավարի beef)
  • 50 g Chorizo ​​(or smoked sausage)
  • 10 ml of lemon juice
  • salt and pepper to taste

First we take the preparation of meatballs. To do this, chop the chorizo ​​into small pieces and mix the minced meat with it. Add spices և lemon juice. We make 70 g balls each և send it to the oven already heated to 180 degrees. Bake for half an hour.

At this point, cook our potatoes with garlic and allspice for about 20 minutes until cooked through. We filter the water. Add butter, wine vinegar and salt to the potatoes. All this is actively mixed.
