Sushi rolls are the most popular Japanese dishes that are easy on the stomach and very tasty. Earlier we talked about making homemade sushi. Properly cooked rice is the most important ingredient in the dish. If you make a mistake in choosing the variety or the cooking process, the rolls will crumble or, conversely, turn into sticky porridge.

How to choose rice for sushi – the right variety

Sushi rice must be sticky so that the dish does not spoil. Grinded, long-steamed rice will not work. High-starch types, such as jasmine and coconut, will be just as good as any premium round grain rice. Some stores sell special sushi rice.

How to cook rice for sushi

  • Round rice or jasmine rice – 200 g
  • Water – 200 ml.
  • Rice vinegar – 5 g
  • Sugar – 2 g
  • Salt – 1 teaspoon

Rinse the rice under running water at least 5 times until the water is completely clear. Put the washed rice in a colander and leave it for 10 minutes so that the water is drained.

Put the rice in a saucepan և fill it with water in a ratio of 1: 1, no more, no less. Bring to a boil over medium heat, then reduce the heat to low and cover the pan with a lid. After boiling, cook the rice for 15 minutes. Remove the pan from the heat, but do not remove the lid. Leave for 10 minutes to steam under the lid.

In a small saucepan or coffee pot, combine the rice vinegar, sugar and salt. Put the pot on low heat until the salt and sugar are dissolved, then immediately remove from the heat. Pour the rice into a wide bowl, preferably a wooden one.
