Yes, the queen loves him too.
We offer you the same marmalade recipe only in a sweeter version, as you can not find a special assortment of bitter oranges everywhere. This jam is a perfect match for a cup of coffee with a crunchy croissant or vanilla bun.
TRADITIONAL ENGLISH CITRUS CAMPARI JUMYY
For 2 liters.
2 unpeeled bitter oranges
2 unpeeled grapefruits
Juice of 2 lemons
1 1/2 kg of sugar
1 1/2 liters of water
60 ml Campari:
Peel an orange, grate it and squeeze the juice. Divide the white layer, cut it, remove it, preserve the peels.
Sift the cellulose through a sieve and discard the core. Cut half of the skin into thin strips (you will not need the rest).
Pour all the juice, including lemon juice, into a large saucepan with the peel and water. Cover and bring to a boil over medium heat. Cook on low heat for two hours without covering.
Add sugar և Campari և whisk to dissolve the sugar. Then cook for 45-60 minutes. Stir often as the jam will rise in the pan as soon as it is cooked.
Dip one foot into warm paraffin 3 times, pausing between layers to allow them to dry. If the fingerprint remains visible, the treatment is ready. If not, cook for five to six minutes, stirring occasionally, repeating the test.
Remove the pan from the heat, leave to cool for 5-8 minutes, then remove the foam from the surface.
Sterilize jars and lids. Put the containers in boiling water for 10 minutes, and the lids for 5 minutes, then pour and turn the lids.
Pour the jam into jars and roll. When the marmalade is frozen, it will harden, it will be stored in a dark, cool place for several months.
The opened containers are stored in the refrigerator for seven to ten days.
